• Dixie Ryan: Having a hot time in the new kitchen

  • It would be my thinking that you could not guess what I did today.
    Well, I took a small skillet and poured some olive oil in it and took it outside. I placed it on my steps that go down to the basement and after ten minutes I dropped an egg in it.
    Guess what? The egg cooked and was pretty tasty so I guess I proved that you can cook food on the outside of your house it is is hot enough.
    The main problem was I went out barefoot and I was dancing on the concrete and burning my feet so guess that won’t be tried again.
    Then I went back inside where the floor was cooler and baked six cookies in my new oven so guess I will refrain from cooking on the concrete and use this new-fangled stove that I bought. My remodeling is coming along, albeit slowly, but someday soon I will have my new kitchen and eventually the house will be beautiful and I will be looking for something new to do.
    I am getting anxious to do some cooking so guess I am healing and will soon be back to cooking some fancy dishes. Here are a couple of desserts for hot evenings.
    Orange Special Dessert
    2 cups water
    3 ounce package orange gelatin mix
    3.4 ounce package instant vanilla pudding mix
    8 ounce container frozen whipped topping, thawed
    11 ounce can mandarin oranges, drained
    In a medium saucepan, bring water to a boil over medium heat. Add gelatin and pudding mixes, whisk and boil for two minutes. Chill in sauce pan just until set; stir in whipped topping and oranges. Transfer to a serving bowl, ready to serve. Serves 8.
    Pineapple Dessert
    20-ounce can crushed pineapple, drained
    20-ounce can pineapple chunks, drained
    14-ounce can sweetened condensed milk
    22-ounce can lemon pie filling
    8-ounce container frozen whipped topping, thawed
    Mix all ingredients in a large bowl. Keep chilled until serving time. Serve cold. Serve 8 to 10. Slow Cooker Steak
    2 to 2 1/2 pounds round steak
    2 (1 1/2 ounce) packages onion soup mix
    2 (10 3/4 ounce) cans cream of mushroom soup
    Slice steak into 5 serving size pieces. Place in a slow cooker and add soup mix, cup water and soup. Cover and cook on low setting for 6 to 8 hours. Makes 5 servings.
    Prepare some mashed potatoes by using pre-prepared mashed potatoes, add cream cheese and some butter. Mix well and microwave. Pour some of the gravy from the meat mix and add a veggie for a great meal.
    Ice Cream Dessert
    1 quart sugar-free vanilla ice cream
    Strawberry, chocolate malt, butterscotch syrup
    Page 2 of 2 - Sugar-free whipped topping
    Place two or three dips of ice cream into an ice cream soda glass. Add some banana slices in between each dip. Add a squirt of each of your favorite syrups and add whipped topping. A few pecans on tops are good if you like nuts.
