What a beautiful autumn we are having. I enjoy sitting on the deck and just admiring the reds, yellows, oranges, and I even saw a pink tree this week. The temperatures, for the most part are a little nippy but I put my fleece blanket over my head and snuggle up. It is truly beautiful.
We have leaves everywhere and since I live on 15 acres, I don’t think I will be raking it up anytime soon. It is tempting to see the leaves and want to run through them but I believe those days are over for me. Therefore I just walk carefully and enjoy what God has created.
It seems to me that going into winter with all this color and beauty will make it a bit easier. I have taken several photos and they are nice to have in the camera to review if I get down in the dumps.
One thing I have learned since the “Bear” passed is that I do not enjoy larger meals. It is difficult to prepare a large meal for one person so I kind of stick with sandwiches, cookies and light things. It is probably healthier and very enjoyable. On several occasions I have taken my lunch outside and eaten it while viewing the leaves. I highly recommend that everyone does that at least once before the leaves are gone.
So I decided to share a few recipes that would work anytime for a quick and easy (but nourishing) meal.
Chipped Beef Rolls
2 packages of dried beef slices Sharp cheese Spread dried beef slices with sharp cheese that has been softened. Roll up like jelly roll. Refrigerate and later slice into desired thickness. Serve with picks.
Celery sticks Chunk-style peanut butter Green stuffed olives,sliced Combine the chunk-style peanut butter with the sliced stuffed olives. Fill the center of each celery stick with this mixture. Refrigerate until ready to serve.
Great Ham Sandwiches
1 cup ground cooked ham 1/4 cup cup pickle relish 1/4 cup chopped celery 1 hard cooked egg, chopped 3 tablespoons mayonnaise Combine ingredients and spread on bread. (Just a suggestion! A piece or two of bologna tastes pretty good if you have no ham).
Boy Scout Sandwich
3/4 cup dill or sweet pickle, chopped 1/2 cup chunk-style peanut butter 1/2 cup chopped celery 1/4 cup salad dressing 1 teaspoon soy sauce, optional Dash of onion salt Combine all of the ingredients. Excellent on any kind of bread. Equally good on crackers. This is a favorite of the Boy Scouts in many areas.
A bowl of fruit, fresh fruit, cookies, cake and other desserts can finish off the meal. I just enjoy the outside (when it is not too cold) and being totally relaxed and enjoying the beauty that God allows us to share.
I try to remember that God knows everything and he never makes mistakes. I am feeling much better about my life this winter so guess I will see you next week.
