One snack I really enjoy is peanut butter. It has protein so it is good for you and there are so many ways you can use peanut butter for snacks.
The one way I really love peanut butter is Amish Peanut Butter. We took a trip with the Elderberries to Wisconsin a few years ago and on our way home we visited an Amish home. The atmosphere and food was totally awesome and she served a fantastic meal to 56 on our bus. She served bowls of Amish Peanut Butter and I have been hooked since. She gave me the recipe and I think I shared it with you but somehow it got misplaced.
Recently I found a recipe for the peanut butter and I am not sure it is exactly the same but it is very good.
You place 1/2 cup creamy peanut butter, 1/4 cup marshmallow crème and 1 cup light corn syrup. Stir all the ingredients together in a mixing bowl until well mixed. Place in a covered container and store in refrigerator. Bring to room temperature to serve as a bread, biscuit or cracker spread or ice cream topper. Makes 1 1/2 cups. It is really great.
Here’s anther good snack when you get the munchies attacks.
1/2 cup chocolate chips 1/2 cup peanut butter 4 teaspoons margarine 6 cups Crispix cereal 1 cup powdered sugar Mix together chocolate chips, peanut butter and margarine. Heat in microwave or on stove top until melted (2 to 3 minutes in microwave): stir well. Pour over cereal and stir. Put powdered sugar in a bag. Pour cereal mixture in and shake well. Put in a dish and enjoy.
1 package super-size flour tortillas 1 (8 ounce) pkg. cream cheese 1/3 cup mayonnaise 2 tablespoons green onion, chopped 1/4 cup black olives, chopped 2 to 2 1/2 ounces Buddig ham
Remove tortilla from refrigerator. Combine cream cheese, mayonnaise, onions and olives. Spread thin layer of mixture on tortillas. Arrange 4 slices of ham over mixture. Tightly roll each tortilla. Wrap individually in plastic wrap and refrigerator at least three hours. To serve cut into 3/4 inch slices.
7 Layer dip
1 (13 ounce) can Bush’s chili hot beans, pureed 1 package guacamole + 1/2 cup Pace picante, medium mixed 3/4 cup Miracle Whip + 1/4 cup sour cream 1 cup black olives, chopped fine 2-3 tomatoes, diced 4 ounce medium or sharp cheddar, grated
Use a large platter with an edge on it. Spread beans, first, spread guacamole and picante mix, next spread Miracle Whip and cream mix, spread olives next, tomatoes and cheese on top. You can also add a layer of diced onions and japalenos if you like more spice. Dip with taco chips and enjoy. Feeds quite a few.
3 or 4 cans Mexicorn (major brand has peppers) 1 small jar mayonnaise Hot sauce to taste Fritos
Mix all together and let set. When ready to serve, add Fritos.
Well it is Saturday morning and they are saying on the weather reports that this afternoon we begin with a horrific winter storm. So I will say a prayer that each of you keep your electricity or have someplace warm and comfy to go in case you need it. And my second prayer is that this will be the last snow storm.
