  • Dixie Ryan: Quick, easy and meaty dishes

  • Guess what? I had a great week and I am getting a new roof. To add to the incredible news, I don’t have to pay for it.
    A couple of weeks ago I noticed a couple of shingles on the ground around my house. I had a guy come out and look and he said he felt I needed a new roof but probably should call my insurance company.
    With all their weather related calls it took two week to get out here and the adjuster went up on the roof.
    His words, “Well, you are going to get a new roof!” I kind of thought that but could see the dollar signs flying around.
    Actually all I had to pay was my deductible and $150 for a better grade roof. So now I have to pick the roofer and get the work done. Hallelujah!
    God takes such good care of me.
    I have another funny story about the kids but will wait til next week due to space.
    I found a recipe book that one of my children made for me for Mother’s Day one year. One of the recipes was this:
    Pronto Pups
    2 cups Bisquick
    1/2 cup cornmeal
    1 teaspoon salt (I used 1/2 tsp.)
    1 1/2 cups milk
    10 franks
    Mix well. Dip franks in batter. Coat well. Fry in deep fat until golden brown. Insert popsicle stick in each pup before serving. If batter gets too thick, add a little milk. Have the mustard ready.
    American chop chop
    1 package elbow-roni
    I pound ground beef
    1 small onion minced
    Salt and pepper
    1 can minced tomatoes
    Cook one package of elbow-roni and drain. Saute ground beef, small onion, salt and pepper. Drain. Add tomatoes, cooked macaroni and simmer. Adjust seasonings. Serve with green salad and garlic French bread.
    Hot dogs delicious
    1/2 cup chopped onion
    1 tablespoon oil
    1 1/2 cup catsup
    1 pound franks
    Buns
    2 tablespoons pickle relish
    1 tablespoon sugar
    1 tablespoon vinegar
    1/4 teaspoon salt
    1/2 teaspoon pepper
    Saute onions in oil. Stir in pickle, relish, sugar, vinegar, salt and pepper. Add franks to sauce. Simmer 10 minutes until franks are heated. Serve in warm buns.
    Sloppy Joes
    1 pound ground beef
    1/2 cup sliced celery
    1/4 cup chopped onion
    1 can Campbell’s gumbo soup
    Catsup and mustard to taste
    Put into skillet 1 pound ground beef, celery and onion and saute until done. Drain. Add 1 can gumbo soup, catsup and mustard to taste and simmer 10 minutes. Heat hamburger buns and fill with Sloppy Joe mixture. Good with carrot stick and pickles.
    Page 2 of 2 - Igloo meat loaf
    Bake your favorite meat loaf in a round bowl or pan. Remove from pan, round bottom up. Frost with hot mashed potatoes. Make indentations with knife blade for ice blocks. Kids love this meat loaf.
