Yesterday my daughter, Renita, anf I went to the Veterans Cemetery in Higginsville to decorate “Grouchy Bear’s” grave. Due to all our cold and snowy weather it had been September when I was here last. It is truly a beautiful place, well cared for and very special.
In September, when I attended a service of my friend, Linda Edson, I went early to place a rose on his grave. After doing that I went up to the little chapel where the service was to be held. My pastor, Brother Randy Messer and the recently retired director of the cemetery were talking. As I walked in Brother Randy said, “You are early.” I immediately explained why I was early and then I said, “He wasn’t here.”
The director got a funny look on his face and asked, “What do you mean he’s not here.”
I said, “He’s with Jesus.” The director relaxed and said, “Oh, OK.”
It was a very funny moment bcause I think he thought someone had taken him.
My cooking has been lacking a lot this past week as I have been preparing for our Elderberries Mystery Trip. We have quite a few going and it is going to be a great trip.
I did get out a couple of cookbooks and try some good old recipes. It really is fun to recall how that recipe became part of my collecions. Most of the time it was due to budget and feeding five kids something they liked, that was healthy and tasty.
Hillbilly steak and gravy
2 to 3 pound hamburger meat
1 onion chopped
1 teaspoon salt
1 teaspoon pepper
1 package brown gravy mix
Enough cold water to get good consistency
Mix hamburger, onion, salt and peper. Form into oblong patties and brown in frying pan on both sides. Add water to almost cover patties. Add 1 package gravy mix (for flavor) and add 2 tablespoons flour for thickness. Mix in cold water. Add to hamburger and water. Simmer for 15 to 20 minutes. If you want hamburger and mashed potatoes you can make them with potatoes or use instant potatoes. Add a veggie and you have a quick and healthy meal. You should have your own gravy also.
2 to 3 cups macaroni
1 to 2 pounds hamburger
1 to 2 cans Campbell's tomato soup
Boil macaroni until tender. Brown hamburger in skillet. Add diced onions, salt and pepper. Drain off fat. Add 1 to 2 cans tomato soup (depending on how much macaroni you use). Add macaroni and one can of water. Let simmer for 5 to 10 minutes. Serve. For tastier casserole pour into iron skillet or casserole dish. Add water to right thickness and cover with grated cheese (Velveeta). Bake 20 minutes in 350 degree oven.
Baked chicken legs
12 chicken legs
2 eggs, beaten
1 1/2 cups cracker crumbs
1 tablespoon salt
1/2 teaspoon pepper
1/2 cup butter
Dip chicken in eggs; then in cracker crumbs. Sprinkle with salt and pepper. Place chicken in oiled pan. Dot with butter; cover. Bake in 350 degree oven about 1 hour or until tender.
