  • Dixie Ryan: My arm is keeping me away from much, but not my recipes

    • email print
  • I am feeling good with little pain but I am still a one hand or arm typist.
On Sunday, I attended Sunday School and church and it was great. The first time I had been there in almost 9 weeks. I am still not allowed to drive so since I live a ways out in the country I hate to ask people to pick me up.
You will get a good laugh out of the main reason I would not go to church once I got to feeling better. I cannot hook my bra, so no church. On Saturday a couple came out and visited and offered to take me to church.
So I thought about it and called my daughter asking if she could come down on Sunday morning and hook my bra and drive me to church. She was willing and so I was on my way. The couple took me out for lunch and brought me home. Friends are sure nice to have.
Now cooking is still a bit of a problem, only because my surgeon does not want me picking up anything with the left hand and there are many things (much to my surprise) that need two hands so I am depending on others to come out and help me. It has been fun getting together in the kitchen and preparing some things.
    Tassies
Cream together 1 3-ounce package cream cheese, 1 stick of butter or oleo and 1 cup of flour until well blended. Divide into 24 pieces. Press dough into small cupcake pans lining the bottom and sides evenly.
Filling: cream 1 tablespoon butter and 3/4 cup brown sugar. Add 1 egg and beat well. Stir in 1 teaspoon vanilla, dash of salt and 3/4 cup broken pecan nuts. Spoon filling into unbaked shells. Bake at 350 degrees for 30 minutes.
Well, I think that is all my one arm can take for this week. So have a great week and stay cool. See you next week.
