  • Dixie Ryan: Quick recipes for hot summer days

  • With these hundred degree temperatures I sure don’t feel like cooking much but decided that I would go through my recipes and find some good ideas that won’t take hours with the oven on. Was pretty successful.
    During the hot summer months I prefer to eat lighter food so had a great time finding the recipes and trying them out. A few of them were old ones I had used a long time ago but still tasted great.
    Quickie dessert
    1 large container Cool Whip 1 can sweetened condensed milk 1 can cherry pie filling 1 large can crushed pineapple, drained 1/2 cup nuts
    Mix and pour into 9 x 13 pan. Freeze. Keeps indefinitely.
    BLT dip
    1 pound bacon 1 cup sour cream 1 cup mayonnaise 1 tomato, chopped Loaf white bread or crackers
    Cook bacon crisp. Crumble and mix with sour cream, mayonnaise and tomato. Toast the bread and cut into bite size pieces for dipping.
    Chocolate chip cheese ball
    1 (8-ounce) package cream cheese, softened 1/2 cup butter (no substitutes), softened 1/4 teaspoon vanilla extract 3/4 cup confectioners sugar 2 tablespoons brown sugar 3/4 cup miniature semi-sweet chocolate chips 3/4 cup finely chopped pecans Graham crackers
    In mixing bowl, beat the cream cheese, butter and vanilla until fluffy. Gradually add sugars; beat just until combined. Stir in chocolate chips. Cover and refrigerate for 2 hours. Place cream cheese mixture on a large piece of plastic wrap; shape into a ball. Refrigerate for at least 1 hour. Just before serving roll cheese ball into pecans. Serve with graham crackers. Makes 1 cheese ball, about 2 cups.. Note that chocolate graham crackers are great too!
    Little Smokies
    1 pound package Little Smokies 1-2 pounds bacon Brown sugar
    Cut the bacon into pieces big enough to go around the Little Smokies. Use a toothpick to secure bacon. Lay in a flat pan with an edge. Cover with brown sugar and bake in a 350 degree oven approximately 30 minutes or until bacon is cooked. Watch closely.
    Quick shrimp dip
    1 block cream cheese 1 can small salad shrimp (cooked) Seafood sauce
    Mix shrimp with seafood sauce (or mix ketchup with horseradish). Pour mixture over cream cheese and serve with crackers.
    Thanks to the ladies of First Baptist Oak Grove for their wonderful cookbook. I obtained several of the recipes from that book and it is a book I use often.
