Friday night, we visited Sprint Center for a Gaither Concert. If you enjoy great gospel music, you know who the Gaithers are and I promise you they are terrific. The thing I noticed the most was how great the Sprint center was. I really went there with a negative attitude having been told so many bad things regarding the facility. None of it proved true.
We parked our tour bus at the entrance, unloaded and were inside the building in a very short time. We walked a few exits down, entered the seating area and were seated a few steps later. It was unbelievable. Bathrooms were located a short distance away as were food or drink items. For our experience the Sprint Center was good experience.
We ate at Bob Evans, Blue Springs, and that was great also. Terrific service, good food and fair prices. I ordered a meal that was a full meal made into a sandwich. I cannot for the life of me remember what it was called but they had three of them and the two I remember were turkey dinner and meatloaf meal. I ordered the meatloaf and it was great.
To reproduce this at home I recommend you make your favorite meatloaf and enjoy the meal. The next day when you have leftovers toast a piece of bread and place it on a plate. Add a slice of warmed up meatloaf, stack on top some instant mashed potatoes (or warmed leftovers from the day before) and pour some warm beef gravy (from a jar) over the top. I think you would have much the same taste, and it really is good.
Another one of the same menu items was turkey and dressing. They placed the bread, sliced turkey, dressing, mashed potatoes on top of each other and poured chicken gravy over the top. Grouchy Bear really liked that. Think of that great idea when we are trying to do away with Thanksgiving leftovers.
A recipe I tried out this past week was called cheese and onion quesadillas and I recommend you try those.
Cheese and onion quesadillas
Butter flavored cooking spray
1 cup chopped onion
4 (8 inch) fat-free flour tortillas
1 cup (4 ounces) shredded reduced-fat sharp Cheddar cheese
1⁄2 teaspoon ground cumin
1⁄2 cup salsa
1⁄2 cup fat-free sour cream
Coat large skillet with cooking spray and place over medium heat until hot. Add onion; sauté 5 minutes or until tender. Remove from skillet. Wipe skillet with a paper towel.
Coat skillet with cooking spray; place over medium heat until hot. Place on tortilla in skillet. Cook 1 minute or until the bottom is golden. Sprinkle one-fourth each of onion, cheese and cumin over one side of tortilla. Fold tortilla in half. Cook tortilla a minute on each side or until golden and cheese melts. Repeat with remaining tortillas. Top each quesadilla with two tablespoons salsa and 2 tablespoons sour cream.
