Odessa, MO —

Grouchy Bear claims he  is starting to feel like he is either part fish or part duck. His complaining is caused by the fact that he cannot get outside and do much of anything. It is worse than winter as he can see the sun on occasion and knows the temperatures are warm and still the rain continues or the mud after the rain stops.

After listening to him complain for a while I reminded him that he did have a home and was comfortable in spite of the inconvenience. Perhaps we all need to think seriously about the fact that we should be thankful for our homes that are not underwater or destroyed by winds.

Our senior adult trip for Monday had to be changed at the last minute due to the fact that Amtrak cannot even get through due to flooding. A very small inconvenience for us compared to the people who have no homes due that that flooding situation.

Perhaps if I cook him something special he will feel better. The same could be helpful to your “bears” too.

 Barbecued ribs for bears

Purchase country style boneless ribs in an amount that will feed your bear or family

Brown ribs lightly on each side

Place them into crock pot which is set on low and pour one can of beef broth over them

Allow them to cook for 4-5 hours on low

Add several cups of your favorite barbecue sauce and allow to cook for another hour or more

These are the most tender and tasty ribs imaginable and sure to cure the doldrums for anyone.

Wash potatoes (I use red potatoes) and prepare the amount needed  for your crowd. Remove any spots and slice potatoes thin. Place potatoes in foil lined pan or cast iron pot and layer with sliced onions and pats of butter. Alternate these layers until you have the amount desired. Fold foil over and bake at 350 degrees until tender. Microwave fat free  shredded Cheddar cheese and butter together and stir well. Open foil and pour the cheese mix over the top of the potatoes. Fold foil back into place and bake another 5 minutes.

Slice bananas, strawberries and blueberries into individual dessert dishes. Mix gently. In a separate bowl add one small yogurt of any flavor per serving and mix well with a half cup of whipped topping. Pour this over the top of the fruit. This is a quick, healthy and tasty dessert or evening snack.

A new barbeque sauce has hit the market and I believe it is one of the best sauces I have ever eaten.

We have added it to pork and beans and baked the beans with this being the only seasoning and they were great. Caribbean Cowboy Sauce from Odessa. Most of the stores are carrying the product so try it out. Even a few barbeque specialists are raving about this new sauce.

So be thankful for our blessings and I will see you next week.
