A good way to detox from a day trip

My wounds from my fall are healing and last Monday I was able to travel with our group to Columbia to attend the Carl Hurley/Jeanne Robertson Comedy Show.

It was absolutely worth the trip.

 Grouchy Bear was smiling all day long. His belly was so full he could not possibly growl or even groan.

 We visited Steinhaus in Boonville and ate some of the best fried chicken ever eaten. I highly recommend that any group call and make arrangements to eat there. Equally good was the Settlers Inn Restaurant at Arrow Rock exit. We consumed another huge meal with smoked pork chops.

Now it is time to “detox” from all the fat, cholesterol and dessert calories. The first day or so was not too difficult as the “Bear” slept for hours after we returned.

After a day the growls began to return so it was back to the kitchen and we had some really great food.

A new magazine I received in the mail “Healthy Cooking,” Taste of Home provided some  new meal ideas.

 

Italian baked

chicken Breasts

2 egg whites

2 teaspoons balsamic vinegar

1/3 cup dry bread crumbs

1⁄2 teaspoon dried parsley flakes

1⁄4 teaspoon garlic powder

1⁄4 teaspoon garlic salt

2 boneless skinless chicken breast halves (4 ounces each)

Butter-flavored cooking spray

1/8 teaspoon salt

1/8 teaspoon pepper

In a shallow bowl, beat egg whites and vinegar. In another shallow bowl, combine the bread crumbs, parsley, garlic power and garlic salt. Dip chicken in egg mixture, then coat with crumb mixture. Place in an 8-inch square baking dish coated with cooking spray; lightly coat chicken with butter-flavored spray. Sprinkle with salt and pepper. Bake, uncovered, at 375 degrees for 20-25 minutes or until a meat thermometer reads 170 degrees.

Nutrition facts: 1 chicken breast half equals 191 calories, 1 g saturated fat, 63 mg cholesterol, 9 carbs.

 I do recommend that you double the above recipe if you want your “bear” to smile and not growl.

To accompany the chicken I prepared a bowl of instant mashed potatoes according to package directions. Then I added shredded cheddar cheese, slices of butter (or margarine), several dashes of onion salt and/or garlic salt. Mixing all together place in baking dish and place in 300 degree oven until warmed and cheese is melted.

Place the contents of one or two cans of refried beans in another baking dish and add a handful or two of cheddar cheese .

Prepare a lettuce salad with your preferences for contents and mix a cup of mayo, 1⁄2 cup salsa, 1⁄2 cup shredded cheese and a small amount of milk. This is a great dressing.

Serve a chocolate sugar-free, instant pudding. Fix this according to package direction and put a dollop of whipped topping and a marchino cherry on top. Every one loves it!

Grouchy Bear assured me that if I continue to do such a good job he might let me stay around another month.
