Don’t give up that bowl of oatmeal this summer just because of the summer heat. Enjoy the goodness of a bowl of cold oatmeal, by making a delicious muesli.

Muesli, pronounced (MYOOS-lee), was first developed as a health food in Switzerland and is a popular breakfast food in Europe. The German word “muesli” means mixture and usually includes raw or toasted cereals such as oats, wheat, millet or barley, dried fruits, nuts, oat or wheat bran and yogurt. It is usually eaten cold with fresh fruit.

Many scientific studies show that eating oatmeal daily may help reduce the risk of heart disease. The benefits are greatest for those people who have high cholesterol. Three grams of soluble fiber can help reduce blood cholesterol in some people. One and one-half cups cooked or three-fourths cup uncooked oatmeal provides 3 grams of soluble fiber.

Summer is an especially delicious time to enjoy muesli with all the fresh fruits, such as strawberries, blueberries or peaches that are available.

This Peach muesli recipe is from Quaker oatmeal and each serving provides 2 grams of soluble fiber.

Peach muesli with berries

2 cups oats (quick or old fashioned, uncooked)

2 cups coarsely chopped fresh or frozen (thawed) peaches

1 1/2 one-half cups apple juice

1 8-oz carton vanilla yogurt

1/2 one-half tsp vanilla

Fresh or frozen blueberries, strawberries or raspberries

Combine all ingredients except berries; mix well. Cover and refrigerate 8 hours or overnight. Serve muesli cold topped with berries. Store covered in refrigerator up to 4 days.
