This week has passed and not one growl from Grouchy Bear. Perhaps the silence has been due to the fact he has been out running all week.
He came home each day in time to eat supper and go to sleep.
I suspect he ate out several times.
As long as he gets to eat all he wants he never growls. When he arrives home he flops down in “old blue” (his recliner) and turns on the television. Within five minutes he begins to snore which is much quieter than the growl.
Since I knew he would only be at home for supper most of the week, I decided to experiment on some recipes and have them prepared when he arrived.
Several evenings I went out to get the mail and when I got into the truck I found some McDonalds wrappers, a Burger King Sack and a few empty candy wrappers.
Does that give us a clue??
We had some mashed potatoes that I had made up from an Amish recipe I had. They were outstanding.
Fridge mashed
potatoes
5 pounds potatoes (12 medium)
1 (8 ounce) carton lite sour cream
1 (8 ounce) package lite cream cheese
2 teaspoons onion salt
1 teaspoon salt
1⁄4 teaspoon white pepper
Butter or margarine
Paprika
Boil unpeeled potatoes until very tender; drain, peel and cut into chunks. Place in large electric mixer bowl and beat at medium speed, adding sour cream gradually. Cut cream cheese into eighths and add with remaining ingredients. Beat at high speed until potatoes are light and fluffy. Refrigerate in tightly-covered container up to 2 weeks.
To use, place desired amount in well-greased casserole, dot with butter and sprinkle with paprika. Bake at 350 degrees until heated through (30 minutes or more). Makes 8 cups.
Poor man’s
chicken fried steak
Purchase the leanest ground chuck, hamburger or ground round available. Most places have up to 95 percent lean. Place into mixing bowl and add eggs. Use the amount of meat according to your needs and do the total eggs accordingly. I use about one egg per pound. Add finely chopped onion according to your taste. Form meat mixture into patties. Using saltine crackers, place crackers into ziploc bag and roll drinking glass or rolling pin over the bag smashing crackers fairly fine. Roll patties into cracker crumbs, pat well and place into skillet that has been sprayed with cooking spray. Cook on low until well done, turning several times.
Using the two items listed above I added a new green bean recipe also. These are really different and we thought they were great so hope you like them also.
Fried green beans
2 cans green beans
2-4 strips bacon
2 heaping tablespoons margarine or butter
Fry bacon until about 1⁄2 cooked. Add green beans (undrained) and 1⁄2 of the butter (1 tablespoon). Cook until juice boils out. Add remainder of butter. Cook on low another 5-10 minutes. Stir frequently to prevent burning.
Enjoy the recipes and I will see you next week.
