We had the most incredible “Celebration of Jerry Ryan’s Life” at our church on Wednesday night. Many people told us how great it was and how they think they may do the same thing when their time comes. All the credit goes to Jerry as it was his wish to celebrate his life in place of the traditional funeral.

Many funny stories were told by friends and family and many of them are in my file box to use in articles in the future. You will learn what a great man he truly was.

One of the ones that was told by the family was pretty funny.  We had been married about four or five years and I was still pretty naïve. Jerry sent our oldest daughter, Renee, to get me to help him with the lawnmower. I went out in the yard and he asked me to put my finger on the spark plug so he could see if it was sparking or not. I did as asked and he pulled the cord and guess what happened to me.

We had a big platter of Chick-fil-A for the party. They were the first things gone, but we paid tribute to Grouchy Bear with a sign that said, “We support Chick-fil-A in honor of Jerry Ryan. Pretty cool!

Several of the people who brought food in for the party were willing to share their recipes with me so I am passing them on to you. There are too many for one article but you will be able to enjoy them for some time to come.

 

Mandarin Parfaits

1 cup cold milk

1 cup (1 ⁄  2 pint) sour cream

1 ⁄ 4 teaspoon almond extract

1 package (4 serving size) vanilla or French vanilla flavor instant pudding and pie filling

1 can (11 ounces) mandarin orange sections, drained

your choice of whipped topping

(This recipe can be doubled or tripled for parties)

Combine milk, sour cream and almond extract in a bowl. Add pudding mix. With electric mixer at low speed, beat until well blended, 1 to 2 minutes. Layer pudding and orange sections in bowl. Chill about 1 hour and top with your selected amount of whipped topping.


 IMPOSSIBLY EASY PUMPKIN PIE

1 ⁄ 2 cup reduced fat Bisquick
1 cup evaporated low fat milk
1 ⁄ 2 cup fat free, cholesterol free egg product or 3 egg whites
1 cup canned pumpkin
1 ⁄ 2 cup sugar
1 1 ⁄ 2 teaspoons pumpkin pie spice
1 tablespoon margarine or butter; softened
1 teaspoon vanilla
 
Heat oven to 350 degrees. Grease 9-inch pie plate. Stir all ingredients until blended. Pour into pie plate.
Bake 35 to 40 minutes or until knife inserted into center comes out clean. Cover and refrigerate any remaining pie.
 
I spent three days cleaning out “Grouchy Bear’s” closet. I never knew he had so many clothes. There were beautiful shirts and Docker slacks. He did not wear them often as he preferred his faded jeans and about five select T-shirts. Just another reason I loved him so much. He was truly his own person.
