The truth is that your recipe lady fell face down on the gravel driveway after stepping into a deep, hidden hole. End results of the accident left me looking like I did take away his doughnuts.
So cooking this week has been simple and seldom. The “Bear” even had to do a few things for himself but he must know I am feeling a little better. At a luncheon at church today he held out his empty lemonade cup and shook the ice to give me a command to refill it for him. Would you like to make a wild guess who filled that cup??
Sweet Potatoes are really good for you and are pretty tasty as well, I think people get hung up on “not” liking something and perhaps have never tried it. That is a bit like the “Bear” who turns his nose up and anything he thinks is healthy.
Since I did not feel like much shopping I was trying to prepare a few meals with what I had. In my potato bin were two huge sweet potatoes which I scrubbed well, peeled, sliced about 1⁄4 inch thick and placed into a baking dish which has been sprayed with cooking spray. As I placed one layer I dotted it with margarine, added more potatoes and then more butter with the last layer being margarine. Sprinkled a little Splenda brown sugar on top, covered with foil and baked until potatoes where soft when punched with fork. They were great.
Another hidden find was a turkey breast I purchased a few weeks ago, so I thawed it out and cut it in half lengthwise. Lifting off the top half I rolled each section in crushed (canned) onion rings. I placed the two sections on on top of the other, placed them on a piece of foil, placed the open foil and turkey in a baking dish and added some melted margarine on top. I used a knife and opened a few spots to pour in some margarine and then wrapped it well. Baked it at 350 for 30-45 minutes.

Some canned cranberry sauce added greatly to the meal and instead of some rolls I just put melted margarine and minced garlic in a bowl and spread it on toast.
The meal was as good as a Thanksgiving dinner and much easier to prepare. A second advantage was that there were leftovers which were equally great a day later.
Another quicky that we used was quite tasty, very simple and on the good health list. Sliced apples mixed with instant oats, Splenda brown sugar and margarine, microwaved or baked, according to your taste is a great snack time or meal time treat. Top it off with fat-free or sugar-free whipped topping.
