Grouchy Bear is snoring loudly as he sits in “Old Blue.” His belly is full, and that always keeps him happy.
In the hopes of eliminating a few old magazines, I spent several afternoons looking through them. I found several good recipes so after we tried them the magazines went back on the shelf.
Easy chicken bake
(provided by Stove Top Stuffing)
1 package (6 ounce) Stove Top Stuffing Mix for Chicken
1- 1⁄2 pound boneless, skinless chicken breasts, cut into 1-inch pieces
1 can (10 3⁄4 ounces) condensed cream of chicken soup
1/3 cup sour cream
1 bag (16 ounce) frozen mixed vegetables, thawed, drained (I used 1⁄2 package of frozen corn and 1⁄2 of baby limas. I would also recommend that French style green beans might be good).
Preheat oven to 400 degrees. Prepare stuffing mix as directed on package, set aside.
Put 1⁄4 cup oil in a skillet and heat. Add chicken and brown until no longer pink.
Remove chicken and using a 13 x 9 baking dish, mix chicken, soup, sour cream and veggies and top with the stuffing. Bake 30 minutes or until veggies and chicken are thoroughly cooked. Makes 6 servings.
This was good, easy and fast and seemed to be approved by you know who.

For dessert, I sliced one banana, two large peaches and placed them into a saucepan. I added 1⁄4 cup of Splenda Brown Sugar, 1⁄2 cup Smart Balance margarine, 1⁄4 teaspoon rum extract and a dash of cinnamon. Bring to full heat but not boil. Turn off and let sit Put lite vanilla ice cream in bowls and pour the hot mix over it. Wonderful! And healthy.
Another recipe I found was placed by Velveeta.
Taco mac & cheese
1 pound ground beef
1/3 cup thick ’n chunky salsa
1 1⁄2 teaspoon chili powder
2 cups (8 ounc) elbow macaroni, uncooked
1⁄2 pound (8 ounce) Velveeta pasteurized prepared cheese product, cut up
Brown meat in large skillet on medium-high; drain
Stir in 2 3⁄4 cups water, salsa and chili powder. Bring to a boil. Stir in Macaroni; cover. Reduce heat to medium-low; simmer 8 to 10 minutes or until water is almost absorbed. Add Velveeta, cook until melted, stirring frequently.
Garnish with cup crushed tortilla chips, 1⁄4 cup chopped tomato and 2 tablespoons green onion, if desired.

Did you hear about the ventriloquist who performed for 300 senior adults at the center in a small town? He got out an antique pocket watch and told them he was going to put them under his control. He showed them an antique pocket watch that had been in his family for 100 years and began swinging it as they said “Watch the Watch. Watch the Watch.” After a few minutes the watch came off the chain and flew across the hall breaking into pieces. The ventriloquist shouted, “Crap.” It took three days to clean the senior center.
