Just don’t tell him that

Grouchy Bear is living high! He is smiling and happy because he is so full of good food which, unbeknownst to him, is healthy.

 For the first time this year we have had a week off. No trips, no church responsibilities and the kids are all in school, so he is getting all the attention. I decided to try out a bunch of new recipes for the Bear, the newspaper and maybe down the road a Grouchy Bear Cookbook.

Since I have tried out about a dozen new meals in the past 10 days I will have to share them as space allows.

The following hamburger pie is outstanding and pretty healthy as well. Low-fat meat, lite cheese and veggies make it good for the health stats.

 

Beef ’n cheese

1 1⁄4 lbs ground beef (85-95 percent fat free)

4 tablespoons instant minced onion

1⁄4 cup chopped green pepper

8 ounce can (1 cup) tomato sauce

1 small can sliced mushrooms, drained

8 ounce can green beans, drained

1⁄4 teaspoon garlic salt (more if desired)

1⁄2 teaspoon salt

1 can (8 ounce) Pillsbury Refrigerated Quick Dinner Rolls

1 egg beaten

2 cups Lite Cheddar Cheese

Paprika

Preheat oven to 375°. In large skillet, brown ground beef, onion and green pepper, drain fat. Stir in tomato sauce, beans, garlic salt and salt. Simmer while preparing crust. Separate crescent dough into 8 triangles. Place triangles in ungreased 9-inch pie pan; press over bottom and up sides to form crust.

Combine egg and 1 cup cheese, spread over crust. Spoon hot meal mixture into crust. Sprinkle with remaining cheese and paprika. Bake 20 to 25 minutes.

For easier serving, let stand 5 minutes before cutting into wedges. Refrigerate leftovers. 5-6 serving.

 One suggestion for making this meal even spicier (according to your tastes), substitute the 8 ounces of tomato sauce for 10 ounces Ro-Tel tomato sauce. If you prefer, use the regular tomato sauce and set the hot sauce bottle on the table for brave souls.

Serve the hamburger casserole with a great lettuce salad. These salads are best if you make sure you have as many add-ins as possible; tomato, onion, cheese, mushrooms, radishes, cucumbers, hard boiled eggs and a good Italian salad dressing.

 Top off the meal with a parfait of your choosing. Instant pudding is the first step and butterscotch, chocolate or lemon are great. Instant, sugar free, pudding mixed up according to package directions. Put one layer of pudding, one layer of bananas, another layer of pudding, bananas and top off with a vanilla wafer and whipped topping.

 This menu serves an outstanding meal, fit to keep “Grouchy Bear” smiling for hours after he falls asleep in his chair, and I am smiling too as it is also a great meal that will keep him happy and healthy.
