When Sunday rolls around and I realize it is time for another article, I also realize that I have cooked 21 meals and several healthy desserts since the last article.
I sometimes get tired of cooking and listening to him growl as it is very difficult to find good recipes that are also very healthy.
Yesterday, “Grouchy Bear” came in from the garden with a big smile on his face. He was carrying a zucchini from his garden. I washed and sliced the squash and cleaned and sliced a large onion, put a little dab of olive oil in the skillet and added the squash and onion. Place the veggies in the pan, top with a lid and cook until tender. Be sure and turn it often and it is worth the effort. Truly great stuff.
I learned another new lesson this week. This came from my grandchildren who told me how good Spam was. Even though they are kind of picky, they love Spam. We were working on a garage sale at one of their homes and they served Spam. I was more than a little bit surprised at how good it really was.
Spam casserole
1 can spam (smoke flavor)
1 green pepper
1⁄2 onion
Pimento (to taste)
1⁄2 c. chopped olives
Grand above. Beat: 2 eggs, 1 3⁄4 cup milk, 1 can mushroom soup
Cover bottom of greased 9 x 13 pan with bread cubes. Place meat mixture over cubes. Top with whole slices of decrusted bread. Pour egg mixture over all; let stand 24 hours or overnight. Spread soup over top. Bake at 325 degrees for 1 1⁄2 hours. Let stand 15 minutes before serving.
I may share some other Spam recipes in the weeks ahead as I feel my grandkids have taught me something new.
Deep, gooey
butter cake
1 yellow cake mix
1 beaten egg
1 stick butter
1 (8 oz) pkg. cream cheese, softened
1 lb powdered sugar
2 eggs, (three if small)
1⁄2 teaspoon vanilla
1⁄2 teaspoon vutter extract
Thoroughly mix together cake mix, 1 egg and 1 stick butter. Pat into buttered 9 x 11 cake pan. Do not flour. Combine cream cheese, powdered sugar, eggs, vanilla and butter extract. Mix for 5 minutes. Spread over cake mixture and bake 30 to 40 minutes at 350 degrees (dry to touch and flat in the middle). Sprinkle with powdered sugar. Cut like bars as it is very rich.
Adding all of the above to numerous bacon and “Garden” tomato sandwiches I think he needs a cholesterol fix.
Amazingly, his blood test results came back on Monday according to his doc, “beautiful blood pressure,” “good cholesterol results,” and “not good sugar levels.”
The doctor tried to tell him that he should appreciate me and what I have done with his blood work results. He further reprimanded him for the sugar results and that he should listen to my suggestions.
To this, dear “Grouchy Bear” said, “I keep telling her not to take me to those buffets and making me eat all those desserts.”
