The time between articles seems to be shorter each week. Add that to the fact that my brain is on overload and I forget things more often then I did a few years ago.
Then just for good measure add all that to the fact I am a year old than I was this time last year and you are really lucky that I remember to write an article at all.
Old Grouchy Bear is in an unusually “Grouchy” mode. He is tired of the rain and mumbles all the time that we are going to winter without any fall and that he is tired of rain. Then he grumbles because he wants lots of sweets but his blood sugar is not good.
So with all things considered I have had thoughts of running away from home. I decided to try it for a full day last week and when I got to the car I looked behind me and there he was. It seems he thought I was going someplace to eat. Oh well!
During the rainy days I have spent some time cleaning out my recipe drawer, file cabinet and books. I found several of my old favorites that I have not used for a long time. The reason I have not used the chicken salad recipe is that it makes food for 24 people. I am going to share it anyway because many people do potlucks in their churches or organizations and with little effort this could be cut down for a small family. This recipe was found in my mother-in-law’s cook book in her handwriting.
Hot chicken salad
serves 24
12 cups diced cooked chicken
2 cups miracle whip
6 cups chopped celery
9 hard boiled eggs, diced
3 cups cream of chicken soup
1⁄2 cup chopped pimento
6 tablespoons lemon juice
1 tablespoon salt
1 tablespoon chopped onion
Let stand in refrigerator overnight. Top with following:
3 cups grated cheese
1 cup chopped almonds (optional)
3 cups chopped potato chips
Bake at 375 degrees for 20-25 minutes
We were given a sack of zucchini so I tried another recipe I found.
Zucchini casserole
4 cups of sliced zucchini
1 lb. ground beef
Garlic salt
Pepper
2 cups cooked rice
1 (8 ounce) can tomato sauce
1 cup cottage cheese
3⁄4 cup cheddar cheese (grated)
1 egg
Add garlic salt and pepper to ground beef; brown slightly. I always use a potato masher to keep my hamburger well blended.
Mix zucchini, seasoned browned meat and rice. Add 1⁄2 of this mixture to a casserole. Mix other ingredients except the sauce. Divide cheese-egg mixture for layers. Cover with sauce after each layer. Bake at 350 degrees for 30-45 minutes.
To keep the sweet tooth under control (I am sure there are many with this problem) I suggest you do lots of fun things with sugar-free, instant pudding.
Banana pudding with chopped bananas, chocolate pudding with sugar-free whipped topping and lite fruits in just about any type of pudding made.
