We can actually see bare ground at our house. Of course by the time this article comes out that may have changed. So get those groceries stocked up just in case we all get snowed in again. The menus seem a bit boring because we are used to getting out and going to a church meal or  a good meal with friends. We have tried several new things, however, and that has helped a little.

The menus seem a bit boring because we are used to getting out and going to a church meal or  a good meal with friends. We have tried several new things, however, and that has helped a little.

One sandwich I  shared with my readers several years ago came to my mind so was delighted to find my ingredients in the fridge.

Some good sandwiches
Hot dog buns (totals according to your needs)

Cover inside buns with light spread of margarine

Slice salami slices into quarters and place them on buns with dill pickle slices alternating (overlapping) until the bun is covered.

Add quarter slices of cheese (American) alternated with quarter slices of tomato placing them on top of the meat.

Put top of bun in place and wrap sandwich in aluminum foil. Bake at 350° until it is well heated. This is truly a good sandwich particularly with the additon of oven fries.

Frozen fries work great. Place your chosen amount in a bowl and shake Parmesan cheese over them. Mix until the cheese has covered them well and place on cookie sheet. Bake according to directions on the package.

For a snack or lite dessert, drain a can of fruit cocktail and add mandarin oranges (drained), sliced bananas or other type of fruit. If we are snowed in we have to make do!! Place whipped topping in a bowl with the amount being according to your needs. Shake in some cinnamon, nutmeg or other preferred seasonings and mix all this with the fruit. This is a great dessert addition for any time of the day. If it keeps the “Bear” happy it will keep anyone happy.

When your grocery supply gets down to hotdogs make hotdog surprises! Slit the hotdogs lengthwise but do not cut through. Place slices or pieces of cheese in the slit and wrap the hotdog with a piece of bacon. Bake in oven until the bacon has crisped and place it on a toasted bun. We heated up some sauerkraut and placed over the top but mustard, relish, catsup or that type of condiment is great too.

Whenever I’m disappointed with my spot in life, I stop and think about little Jamie Scott.

Jamie was trying out for a part in the school play. His mother told me that he’d set his heart on being in it, though she feared he would not be chosen. On the day the parts were awarded, I went with her to collect him after school. Jamie rushed up to her, eyes shining with pride and excitement. “Guess what, Mom,” he shouted, and then said those words that will remain a lesson to me... “I’ve been chosen to clap and cheer.”

So I guess if the snow flies again I will do the above. Clap and cheer!

See you next week.
