Today is Sunday and even better it is Easter. I love Easter and we have always had big familiy events each year. With my hubby gone and most granddaughters in college, married or busy with jobs and such we did not celebrate as a family this year.

Each individual family celebrated big time and in some cases more than one family unit shared time together so our plans for many years continue on.

For years we had a big dinner at grandma's and grandpa's every Easter. Each one of the seven granddaughters had 30 eggs in their special color. That made 210 eggs we stuffed each year and grandpa hid them all over our 15 acres for the girls to find. They had neat things inside each one and each girl got the same items. It was a special day.

Today I went to my oldest daughter's house. Renee and Jeff don't have children so it was just us oldies and we had a great meal and a nice day.

 

5 minute chocolate mug cake

4 tablespoons all purpose flour

4 tablespoons sugar

2 tablespoons baking cocoa

1 egg or 1 tablespoon corn starch and

3 tablespoons water or coffee

3 tablespoons milk or soy milk

1 tablespoon oil

3 tablespoons chocolate chips (optional)

Small splash of vanilla extract or almond extract or Kahlua

1 coffee mug

This recipe has been circulating the Internet for a while, this is my version adapted to those allergic to eggs and milk but still require chocolate on a regular basis for medicinal purposes. Put dry ingredients in mug and and mix well. Add the egg (or corn starch) and mix thoroughly. Pour in the milk (or soy milk) and oil and mix well. Add the chocolate chips (if using) and vanilla extract (or whatever you choose) and mix again. Microwave for 2-3 minutes at 1000 watts (this will vary depending on your microwave and your mug and whether or not you use a real egg. The cake will rise over the top of the mug but don't be alarmed. Allow to cool a little and tip out onto a plate if desired. You may have to run a knife around the edge to loosen. EAT!!! This could serve two people, but why? This is a dangerous recipe. All you need is a mug, a tablespoon and a fork and you are 5 minutes from chocolate cake any time of the day or night. Remember: Self control.

 

PMS cookies

1 chocolate cake mix

2 smashed ripe bananas

1 egg

4 tablespoons water

6 ounces chocolate chips

Preheat oven to 350 degrees. Combine cake mix, bananas, egg and water. Mix until smooth. Add chocolate chips. Drop by rounded teaspoons on a greased cookie sheet. Bake for 8 to 10 minutes. Check bottoms of cookies, add a few more minutes if needed. Remove from oven and cool cookies on a rack.

 

Pop corn cake

1/2 cup unpopped popcorn

1 bag (16 ounces) miniature marshmallows

1 stick of oleo or butter

Nuts

1 16-ounce bag M&M's

Pop corn and put in large bowl. Mix marshmallows with butter. Melt in microwave. Mix together and pour over popcorn. Stop when cooked some, add the M & M's and nuts. Spray oil an angel food cake pan. Press popcorn mixture into pan then turn onto cake pieces.
