MIRIAM’S AMISH POTATO SALAD

• 6 medium potatoes, cooked • 6 eggs hard boiled and chilled • 3/4 cup celery, chopped (optional) • 1/4 medium onion, chopped (optional) Dressing • 1½ cup salad dressing • 3 tablespoons prepared mustard • 2 tablespoons vinegar • 1 1/4 cup sugar • 1 3/4 teaspoons salt • 1/4 cup milk Cut potatoes in wedges and put into a pan, add several cups of water. When potatoes reach a boil, turn to low and simmer until fork tender.

SMOKY VEGETARIAN ENCHILADAS

Recipe by Linda Gassenheimer • 1 cup diced onion • 1 cup diced green bell pepper • 2 crushed garlic cloves • 1 cup canned reduced-sodium black beans, washed and drained • 2 teaspoons ground cumin • 2 teaspoons smoked paprika • Salt and freshly ground black pepper • 1 1/2 cups pasta sauce, divided use • 1 cup low-fat shredded Monterey Jack cheese, divided use • 1 cup fresh arugula leaves • 4 8-inch light whole wheat flour tortillas Add onion, green bell pepper and garlic to a microwave-safe bowl. Microwave on high 5 minutes.
