LOCAL COVID-19 TESTING SITES

University Health testing: Regular testing hours are 8 a.m. to 4:30 p.m. weekdays and 8 a.m. to noon Saturdays. Testing is available at the Lakewood campus at 7900 Lee’s Summit Road, Kansas City, and the Hospital Hill site at 2211 Charlotte, Kansas City.

CHICKEN SPAGHETTI CASSEROLE

• 2 lb chicken breasts • 1/2 cup butter • 6 tablespoons flour • 2 cups milk • 1/2 pound melting cheese, such as Velveeta • 1 can cream of mushroom soup • 8 oz spaghetti, cooked and drained • 1/2 teaspoon salt, or to taste • 1/4 teaspoon black pepper Grill, fry, or bake chicken until done. Cut into bite-sized pieces.

CHICKEN AND ZUCCHINI NOODLES ‘PASTA’ SALAD

Recipe by Linda Gassenheimer • 3 tablespoons reduced-fat mayonnaise • 3 tablespoons warm water • 2 tablespoons prepared horseradish • 1 tablespoon honey • 1/2 cup fresh basil leaves, torn into bite-size pieces • 1 cup green beans, cut into 1-inch pieces • 8 ounces zucchini noodles (about 2 cups) • 3/4 pound bought rotisserie or cooked boneless, skinless chicken breast (about 2 cups) • 1/2 cup sliced scallions • 1 red bell pepper, cut into 1-inch pieces (about 1 cup) • 2 slices whole wheat baguette Mix mayonnaise with warm water until smooth. Mix in the horseradish and honey.
