Gasoline prices rise a little

Oil producers’ announcement of production cuts has bumped up gasoline prices, according to AAA. The group says the average price of a gallon of gas on the Missouri side of the Kansas City area was $3.41.8 as of Tuesday. That’s up 12.7 cents over the last week and 17.9 cents over the last month.

VERMONT APPLE CIDER DOUGHNUTS

• 1 cup granulated sugar • 5 tablespoons unsalted butter, at room temperature • 2 large eggs, at room temperature • 3 1/2 cups all-purpose flour, plus extra for work surface • 1 1/4 teaspoons table salt • 2 teaspoons baking powder • 1 teaspoon baking soda • 1 1/2 teaspoons ground cinnamon • 1/2 teaspoon freshly grated nutmeg • 1/2 cup low-fat buttermilk • 1/3 cup boiled apple cider • 1 tablespoon vanilla extract • Canola or safflower oil, for frying • 1 1/2 cups sugar mixed with 3 tablespoons ground cinnamon In a large bowl using a hand-held or standing mixer fitted with a whisk attachment, beat together sugar and butter until mixture is pale and fluffy, 4-6 minutes. Add eggs, one at a time, beating a minute after each.

TERIYAKI SALMON

Recipe by Linda Gassenheimer • 3/4 pound salmon fillet • 2 tablespoons sesame oil, divided use • Salt and freshly ground black pepper • 2 teaspoons minced garlic • 1/4 cup reducedsodium teriyaki sauce Preheat oven to 175 degrees Fahrenheit. Place salmon on a small baking sheet and spoon 1/2 tablespoon oil on each side.

SWEET POTATO CASSEROLE

Batter: • 2 cups cooked and mashed sweet potatoes • 1/3 cup butter • ½ cup sugar (I substitute with natural sweeteners) • ½ teaspoon salt • 2 eggs • 1 teaspoons vanilla • 2 teaspoons all-purpose flour Crumbs: • 1 cup chopped pecans • 1/3 cup all-purpose flour • 2½ tablespoons butter, melted • ½ cup brown sugar (I use xylitol mixed with a bit molasses) Mix sweet potatoes with softened butter, sweetener,and salt. Beat eggs with vanilla and flour and mix into sweet potato mixture.
