This past week has been a great one. We did not lose our car in a parking garage nor did hubby knock over a large Diet Pepsi in a Taco Bell.

This past week has been a great one. We did not lose our car in a parking garage nor did hubby knock over a large Diet Pepsi in a Taco Bell.

In addition, “Grouchy Bear” was able to eat biscuits and gravy, pancakes and waffles, all in one week. He was in such a good mood I decided to really put together some fancy meals for him and see if his disposition would be good all week long.

The Bear wants to eat all the unhealthy stuff and then take his seven pills for cholesterol and blood pressure to ward off the demons. It doesn’t work that way, so I have to pull lots of tricks.

I had read a book on healthy cooking and one of the best things for you is blueberries. They are great for many things, and so I looked for a recipe or two with blueberries. I found one hamburger recipe that has blueberries in it, but I was afraid that he would never buy that one.

Ironically it worked, and he loved the hamburgers. So did the two couples I had invited to dinner (just in case he didn’t like them), and I was very pleased.

Blueberry burgers

2 pounds lean ground beef

Salt and pepper to taste

1⁄4 teaspoon chili powder

1 teaspoon hamburger seasoning

1/8 teaspoon cayenne pepper

1 tablespoon minced onion

1 tablespoon dried parsley flakes

1⁄4 cup milk (non-fat)

1⁄4 cup blueberries

Place meat into a bowl and break into pieces. Add all ingredients except blueberries. Gently add the blueberries taking care not to mash or break them. When forming the patties, do not overhandle the meat. Place the burgers on a hot grill or into a broiler pan for the oven. When they are cooked according to your taste, add them to buns. Make sure you have sliced tomatoes, onion, lettuce and condiments!

To accompany the hamburgers, I had Mexican style chips and guacamole. This is a pretty healthy guacamole, but it was good.

Creamy guacamole

4-5 peeled and pitted avocados

1/3 cup finely chopped onion

1 tablespoon minced garlic

1 tomato, diced

2 ounces low-fat cream cheese

4 drops hot pepper sauce

1⁄4 cup fresh cilantro (optional)

2 Tablespoons fresh lime juice

Lawry’s seasoned salt, to taste

In bowl mash avocados, leaving some chunks. Add remaining ingredients and mix to blend. Make this guacamole as close to serving time as possible.

Prepare a lettuce salad by adding onion, shredded cheese, tomatoes, bacon and perhaps some hard-boiled eggs.

As I said at the beginning, it has been a good week. Grouchy Bear has been happy and is healthy without knowing it. You know the old saying, “When Grouchy Bear isn’t happy, ain’t nobody happy.”

See you next week.
